Vegan & Gluten Free Chocolate Chip Banana loaf!!

Hey guys! Here is a new recipe! This one is fully zero-waste, vegan and gluten free! Plus it can be nut and oil free, anddddd it uses only 6-7 ingredients!


I thought this would be a good recipe for when you have ripe bananas that you don't know what to do with. Plus, you should have most to all of these ingredients at home already, and they are ones that can be found in bulk stores!


If you are looking for more of a bready, masterchef quality, beautiful type of loaf, this ain‘t it. To make it rise and all, you need ingredients that can’t always be found in bulk. This is more of a moist (sorry for the language chosen), not as aesthetically pleasing, none risen loaf, that is still super delicious! If you want more of a loaf type cake, I can do my best to make one that is as zero-waste a possible, just let me know!


Quick side note, there is a lot of controversy around bananas and where they come from. To be honest, we should all be reducing our banana consumption if they come from abroad, but if from time to time you do buy them, make sure they are fair trade.


 

Prep time: 5-10 minutes

Baking time: 20-25 minutes

Serving size: 5 people (if you like a big old slice)


Ingredients:

  • 1 cup oat flour (you can blend oats in a blender for the flour)

  • 5 ripe AF bananas (preferably riper than the ones I used)

  • As much dark chocolate as you want ( cut in chocolate chip form if not already)

  • 1 tablespoon of cinnamon

  • Pinch of salt

  • 3-5 tablespoons of runny or thick peanut butter (you can use any nut butter or opt this option out)

  • 2 tablespoons of sweetener of your choice (this is optional - personally I think it is sweet enough without, but depends on your sweet tooth)

  • 1 tablespoon of oil to coat the tin (you can also use reusable baking sheets)

  • 1 loaf tin


Method:

  1. Preheat the oven to 180 degrees with both fans on

  2. In a bowl add the bananas and mash them up

  3. Add the oat flour, cinnamon, salt and mix well

  4. If you chose to, add the nut butter, sweetener and mix well

  5. Add the chocolate chips and mix

  6. Coat the loaf tin with oil or use reusable baking paper and add the mixture

  7. Bake for 20-25 minutes - poke a knife in it and if it comes out dry, it is ready. Try not to poke where you see chocolate as that will come out on the knife, and you do want melted chocolate.


* If it is too dry which can happen sometimes, you can add a bit of oil to the mixture.
