Vegan and Gluten Free Orange Drizzle Cake!

Hey guys! Merry Christmas! This holiday season I thought to share the orange cake I will be making for Christmas Day, I made this last year and it was such a hit! Regardless if you celebrate Christmas or not, you should definitely try this one! It's perfectly moist and fresh with this sugary sweetness on the outside, just yummm!



Ingredients


For the cake:

  • loaf tin

  • vegan butter to coat tin

  • 250 ml vegan milk of choice

  • 1tbs cider vinegar

  • 250ml plain GF flour

  • 1 1/2tbs baking powder

  • pinch of salt

  • 120g sugar of choice (I use brown caster or coconut sugar)

  • zest of 2 oranges (save a pinch for icing)

  • 70ml oil (sunflower or rapeseed work well)

  • 20g poppy seeds (this is optional, I sometimes add them, so depends on your preference)

  • 5tbs of orange juice squeezed from oranges you zested

  • slice thin orange slices for decoration

For the icing:

  • 50g icing sugar (you can also use the sugar used in the recipe, will just mix differently)

  • 3tbs orange juice squeezed from oranges you zested

  • a pinch of orange zest


Method


  1. Preheat oven to 180C

  2. Mix the milk and vinegar in a bowl until frothy

  3. In an other bowl sieve together the flour, baking powder, sugar, salt, (and poppy seeds if you chose to use them), and mix

  4. To the milk add the orange zest, oil and orange juice, and mix together

  5. Add the wet mixture to the dry ingredients in batches combining them well

  6. Coat the tin in vegan butter (or oil)

  7. Add the cake mixture to the tin

  8. Place thin slices of oranges on top for decoration - you could place three whole slices on one side in the middle of the cake or cut each slice in half and place them in a circle in the middle to create a flower.

  9. Bake for around 40-45 minutes, use a knife to see if the middle is cooked. Should have risen and look slightly golden.

  10. Once out let it cool in the tin

  11. In the meantime make the icing by mixing together the icing sugar, orange juice and zest - add more orange juice if needed to get a smooth and runny consistency

  12. Once the cake has cooled down, cut around the edges to make sure the cake has not stuck to the tin, but leave it in the tin

  13. Use a fork to make holes all over the cake, drizzle the icing and leave to soak in the tin

  14. Take the cake out, sieve some icing sugar on top and serve! Goes great with some vanilla ice cream!
