Vegan and Gluten Free Chocolate Chip & Walnut Banana Bread!

Hey guys, hope everyone is doing good and staying safe! Here is an other banana bread recipe. The last one I posted is a 5 ingredient banana bread, easily zero-waste and perfect at the moment if you do not have many ingredients available.


Since everyone is busy away baking, I decided to post an other one that has more of a bread-like texture, as the last one being so simple has more of a cake texture to it! Therefore, this recipe does have more ingredients to it, but I will mention which ingredients can be swapped or not included. Still, remember to check out the other banana bread if you haven't already, you might prefer that one!


Some notes:

  1. To make the apple sauce I cooked a medium sized apple in the oven until golden brown, removed the skin once cooled and blended it up. Perfect zero-waste option.

  2. Flax egg is made by combining 2 tbs of ground up flaxseeds with some water, and left to sit for 10 minutes.

  3. I use oat flour which I make by blending oats. I also use coconut flour in this recipe, but you can use other types like almond flour.

  4. You can use any type of oil if you don't have coconut.

  5. Instead of apple sauce, you can use agave/maple syrup.

  6. The cinnamon, vanilla extract, chocolate and walnuts are ingredients you can easily omit from using or switch to ones you prefer.

  7. I use both baking soda and baking powder, but I am aware that not everyone might have them. Either use the one you have, or you can skip this step, just know that it won't rise as much and have more of a cake-like texture. (there are also many replacements online such as using apple cider vinegar)


 

Servings: 10 slices

Prep Time: 15 minutes

Cooking Time: 60-70 minutes

Cooling Time: 1 hour


Ingredients:

Wet Ingredients:

  • 4 ripe bananas (1 to garnish)

  • 50 g coconut oil melted

  • 60 g apple sauce

  • 1 flax egg

  • 1tsp vanilla extract

  • 5 tbs plant based milk

  • 50g peanut butter (optional)


Dry Ingredients:

  • 120 g oat flour

  • 95 g coconut flour

  • 1tsp baking soda

  • 1tsp baking powder

  • pinch salt

  • 1tbs cinnamon

  • 80g dark chocolate chunks (save a few to garnish)

  • 50g chopped walnuts


Method:

  1. Preheat oven to 190 ° Celsius

  2. Mash 3 bananas in a bowl with a fork (you can either mash them completely or leave some banana lumps, depends on preference)

  3. Mix all the dry ingredients into a bowl except for the chocolate and walnuts

  4. Add the mashed bananas and mix slightly

  5. Add all wet ingredients and mix together well

  6. Add the chocolate and walnuts and mix

  7. Coat a loaf tin with either oil or butter, and with some GF flour to prevent mixture from sticking

  8. Add the mixture to the loaf tin

  9. Cut a banana in half and place on top of the mixture along with the left over chocolate

  10. Bake for around 55 minutes and then check on mixture by poking a knife through the centre (you want the mixture to be slightly moist but mainly dry). If you prefer a drier banana bread, leave in for an other 10 -15 minutes.

  11. Once out of the oven, let cool for around 1 hour before removing from the tin

  12. Then enjoy!! A great combo I would recommend is a slice of toasted banana bread with some peanut butter on top!
